Weekly Menu 10/8-10/12


Monday-Enchiladas
HEB has a great meal deal going on. Last week I did the lasagna and this week I think I will try the enchiladas. It comes with bread, salad, juice, and candy bars.

Tuesday-Italian Sausage Soup
Remember when I told you fall just makes me want to fix soup. Well here I am again fixing an Italian Sausage Soup from Cooking Light and it is oh so yummy. HEB has a great deal on Italian sausage and you can find some fresh bread to compliment your soup. Your family will love it. It is simple and fresh.

Wednesday-Citrus Soy Chicken Drumsticks
There is a good deal on chicken drumsticks this week at HEB and this recipe will make you appreciate it even more. The Citrus Soy Chicken Drumstick recipe from Cooking Light is very easy and budget friendly. Just make sure you marinate your chicken the night before and you will be set.


Thursday-Slow Cooker Cheesy Chicken and Potatoes
I am going to be busy all day Thursday so nothing makes my day more enjoyable than knowing dinner is ready for me when I get home. The Slow Cooker Cheesy Chicken and Potatoes recipe from Kraft looks like the perfect match with the chicken thighs that are on sale at Kroger.


Friday-DiGiorno Pizza
What can I say. It is Friday and these pizzas were calling my name :)

Weekly Menu 10/1-10/5

Monday Whole Chicken:
One of my husband's favorite dishes is a roasted chicken. So whenever it goes on sale at HEB I can't resist and make it. This week I am trying out a Herb Roasted Whole Chicken recipe from The Pioneer Women and it looks irresistible. I can't wait to try it.


Tuesday: Lasagna
I couldn't resist this weeks Meal Deal at HEB. How easy is it to put the lasagna and garlic bread in the oven and a salad on the side? No stress and no mess.




Wednesday: Lloyd's BBQ Ribs
Yum, yum. These are the part of their $5 Friday special. For only $5 they make for an easy mid-week meal. Put some potatoes and a salad on the side and you have a down home dish.





Thursday: Pork Tenderloin with Pears:
We are having company over tonight and I want to do something a little special. I am purchasing the Pork Loin from Kroger and the Pears from HEB. This recipe is from Bon Appetit Magazine and it looks amazing. I was a little nervous about the Pear Nectar but it is only $.75 for a Goya can of nectar located in the Spanish section.



Friday: Chicken RanchTacos
Okay, Okay I know I have had tacos a lot lately but with prices like this who could resist! You can find them at HEB this week for a $1 and there are printable coupons that make the deal even better.  I am going to use one of the recipes from Old El Paso called their Chicken Ranch Chicken and it looks delicious.

Monday-Sesame Chicken

I hope you like chicken! I know my family does and this week I am feeling a little spicy and I making this Asian inspired dish from Melissa D'Arabian. It is very simple and with the chicken deal at HEB it will fit in your budget nicely.


 









Tuesday-Grilled Hot Ham and Cheese Sandwiches and Veggie Soup

I love love love fall and I know it is still 89+ degrees outside but I can’t help but feel the need to make some soup. My husband requested Veggie Soup.  You can make your own (which I recommend, it makes your house smell yummy) or from a can. There is Campbell’s soup on sale at Randalls and it goes great with the meal deal at HEB for your hot ham and cheeses.







Wednesday-Tacos

I know I made tacos last week but I can’t help but do it again when there is such a good deal on tacos at both Randalls and HEB. They were free at Randalls with the printable Old El Paso coupon last week and $.50 at HEB this week.

























Thursday-Penne with Tomato, Basil, Zucchini and Garlic

This recipe is an oldy and a goody! I used to make it all the time when I first got married and loved it, 1) Because it was soooo easy 2) Because it was cheap 3) Because it was delicious! I found it on the back of a Barilla box and cut it out and still keep it in my recipe box. You can find all these ingredients on sale at Kroger this week.






Friday-Parmesan-Crusted Pork Chops       

This is an easy Friday dish to be paired with a salad and more than likely macaroniJ. The recipe is from Giada De Laurentis and will knock your socks off. The pork chops are on sale at Kroger for just $1.99 lb!

Weekly Menu 9/17-9/21


 Monday-Tilapia Fillets
I love these tilapia encrusted fillets from HEB. They are so yummy and the kids gobble them up. All you need to do is pan sear them for about 7 minutes tops, it couldn't be more simple. Enjoy.

 
Tuesday-Sweet Smoky Chicken Legs Recipe
This recipe from Taste of Home looks very simple and uses few ingredients which is a money saver. Who could pass up the $.88lb price at Randalls.
 
 
Wednesday-Panini's
I like to make paninis and put them on the George Forman grill. It is an easy hump day dinner. With this meal deal at HEB it was hard to pass up.
 











Thursday-Creamy Bow-Tie Pasta with Chicken and Broccoli
I have been making this recipe from Kraft for years! It is a crowd favorite and so very simple. Most of these ingredients can be found at the Mega Event at Kroger. The broccoli and the chicken can be found at Randalls.
 
Friday-Stouffer's Lasagna
It is Friday and as far as I am concerned my kitchen is closed. That is why I am popping in a Stouffer's lasagna from HEB and adding a side salad and calling it a night.

Sorry I have taken a break from these but this has been a crazy couple of months!

Monday-Homemade Pizza
 
I am going to make homemade pizza  using the HEB deal. Very easy Monday night dish. I like to top mine with ham and pineapple (weird I know but I looooove it). What do you like to top your pizza with?

Tuesday-Creamy Pesto Shrimp and Rice

Kraft Philadelphia Cooking Cremes are part of the Mega Event at Kroger and I wanted to incorporate it  in my recipe this week. This recipe comes from their website and will go great with the Shrimp Combo Deal at HEB. This looks so easy and delicious!

Ingredients:
1 red pepper, cut into strips, halved
3/4 lb.frozen cooked cleaned medium shrimp, thawed
1 clove garlic, minced
1 Tbsp. fresh lemon juice
1 tub (10 oz.) PHILADELPHIA Creamy Pesto Cooking Creme
2 cups hot cooked long-grain white rice
1 Tbsp. chopped fresh Italian parsley

Directions

Cook and stir peppers in large nonstick skillet on medium heat 3 to 4 min. or until crisp-tender. Add shrimp, garlic and lemon juice; cook and stir 2 min.
  1. Add cooking creme; cook and stir 2 min or until heated through.
  2. Serve over rice. Sprinkle with parsley.

Wednesday-Brown Sugar Pork Chops with Peach Barbecue Sauce

I love peaches, I look forward to summer just for peaches. This week at Kroger they have peaches on sale for $.88lb and pork chops on sale for $1.99lb! This recipe from myrecipes is so delicious, your mouth will be watering.
Ingredient
  • 3/4 cup firmly packed dark brown sugar
  • 1/4 cup kosher salt
  • 2 cups boiling water
  • 3 cups ice cubes
  • 4 bone-in pork loin chops (about 2 lb.)

  • 1 medium-size sweet onion, finely chopped
  • 1 tablespoon canola oil
  • 1 garlic clove, minced
  • 1 (1-inch) piece fresh ginger, peeled and grated
  • 1 1/2 cups ketchup
  • 1/2 cup peach preserves or jam
  • 2 large peaches (about 1 lb.), peeled and cut into 3/4-inch chunks
  • 2 tablespoons apple cider vinegar
  • Kosher salt and freshly ground pepper to taste
  • Garnish: fresh oregano sprigs

Preparation

  1. Combine sugar and salt in a large bowl; add boiling water, stirring until sugar and salt dissolve. Stir in ice cubes to cool mixture. Add pork chops; cover and chill 30 minutes.
  2.  Meanwhile, sauté onion in hot oil in a medium saucepan over medium heat 2 minutes or until tender. Add garlic and ginger; cook, stirring constantly, 45 to 60 seconds or until fragrant. Add ketchup, peach preserves, and peaches. Reduce heat to low, and simmer, stirring occasionally, 30 minutes or until sauce thickens. Add vinegar; season with kosher salt and freshly ground pepper to taste. Remove from heat.
  3. Remove pork from brine, discarding brine. Rinse pork well, and pat dry with paper towels.
  4. Preheat grill to 350° to 400° (medium-high) heat. Pour half of peach mixture into a bowl; reserve remaining mixture. Season both sides of pork with desired amount of kosher salt and freshly ground pepper.
  5. Grill pork, covered with grill lid, 5 to 6 minutes on each side or until a meat thermometer inserted into thickest portion of each chop registers 145°, basting pork occasionally with peach mixture in bowl. Remove pork from grill; let stand 5 minutes before serving. Serve with reserved peach mixture.

Thusday-Tacos

I am incorporating the $.50/1 Old El Paso coupon that doubles at Randalls that equals free seasoning mix. I lay out all the toppings; avacados (on sale at Randalls), sour cream, cheese, tomatoes, hot sauce, and onions. and enjoy!

Friday-Hot Dogs

If you do not have any hot dogs in your house I don't know where you have been because both Randalls, HEB, and Kroger have had crazy hot dog deals.There is a great Meal Deal at HEB when you buy(2) Ball Park Franks and HEB shredded cheese.  I have hot dogs coming out of my ears! I also have plenty of Mac and Cheese, a child's delight. Hey it is Friday night, let's keep it pretty easy.

Budget Friendly Menu 6/25-6/29

Here is the menu for 6/25-6/29, I used the grocery deals going at the local grocery stores so you can make a healthy cost-friendly meal for your family.

Monday-Brisket with Coleslaw side

I used the meal deal at HEB! This is bound to get your family's mouth watering it is from the Food Network
Ingredients
2 tablespoons chili powder
2 tablespoons salt
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground black pepper
1 tablespoon sugar
2 teaspoons dry mustard
1 bay leaf, crushed
4 pounds beef brisket, trimmed
1 1/2 cups beef stock
Directions
Preheat the oven to 350 degrees F.
Make a dry rub by combining chili powder, salt, garlic and onion powders, black pepper, sugar, dry mustard, and bay leaf. Season the raw brisket on both sides with the rub. Place in a roasting pan and roast, uncovered, for 1 hour.
Add beef stock and enough water to yield about 1/2 inch of liquid in the roasting pan. Lower oven to 300 degrees F, cover pan tightly and continue cooking for 3 hours, or until fork-tender.
Trim the fat and slice meat thinly across the grain. Top with juice from the pan.
Tuesday: Tacos
I am using the ground beef that is on sale at Kroger and the avocados to make a wonderful taco. Taco shells are on sale for a 5/$5 at HEB. I like my tacos with beef, sour cream, cheese, salsa, lettuce and black olives. What do you like on your taco?
Wednesday: Baked Ravioli

I am buying the Combo Loco at HEB. When you buy a Buitoni pasta you get free rolls. I am going to make a baked ravioli. Easy Peasy!
Ingredients:
1 (28 ounce) cheese ravioli
1 (28 ounce) jar marinara sauce
1 cup Parmesan cheese, freshly grated
2 cups shredded mozzarella cheese
10 ounces frozen spinach, thawed and squeezed of liquid (fresh spinach can also be used and is easier than thawing)
black pepper, to taste
Directions:
1Pour some tomato sauce into bottom of 9x13 inch casserole (just enough to keep the bottom wet).2Place a layer of frozen ravioli (no need to thaw or pre-cook) in the sauce. Sprinkle with spinach, Parmesan, and mozzarella.3Place another layer of ravioli. Pour the rest of sauce over the ravioli.4Sprinkle rest of cheeses over the sauce. Season with black pepper to taste.5Bake covered with foil for 30 minutes at 350 degrees. Uncover and bake for another 30 minutes or until cheese melts and sauce bubbles.
Thursday: Parmesan Chicken Legs with a side of Green beans.
Parmesan Chicken II Recipe
I am using the deal at Randalls for Chicken Legs and sauteing green beans to go on the side. The recipe for Parmesan Chicken looks super simple.
 12 chicken drumsticks
2 cups grated Parmesan cheese
1 egg
1 teaspoon ground black pepper
1 teaspoon salt
Directions
1. In a shallow bowl, mix together salt, pepper, and cheese. In a separate bowl, beat egg until lemon colored. Dip chicken in egg, coating well. Roll in cheese.
Friday: Huevos Rancheros
I still have tortillas from last week and a ton of eggs from the Kroger deal on eggs. I also have avacados and I thought Huevos Rancheros was perfect.
Ingredients
1 tablespoon(s) vegetable oil
1 medium onion, finely chopped
2 clove(s) garlic, crushed with press
1 tablespoon(s) chipotle sauce or other hot sauce, plus additional for serving
1 teaspoon(s) ground cumin
1 can(s) (28-ounce) tomatoes in juice, drained and chopped
1 can(s) (15- to 19-ounce) black beans, rinsed and drained
1/4 cup(s) (loosely packed) fresh cilantro leaves, chopped
1/4 teaspoon(s) salt
1 tablespoon(s) margarine or butter
4 large eggs
4 (6-inch) corn tortillas, warmed
1 avocado (optional), sliced
Directions
1. In 4-quart saucepan, heat oil on medium until hot. Add onion and garlic, and cook 8 minutes or until beginning to brown. Stir in chipotle sauce and cumin; cook 30 seconds, stirring. Add tomatoes; cover and cook 3 minutes to blend flavors, stirring occasionally. Stir in beans, half of cilantro, and 1/4 teaspoon salt; heat through, about 3 minutes, stirring occasionally.
2. Meanwhile, in 12-inch nonstick skillet, melt margarine on medium. Crack eggs, 1 at a time, and drop into skillet. Cover skillet and cook eggs 4 to 5 minutes or until whites are set and yolks thicken.
3. Place tortillas on 4 dinner plates; top each with some tomato mixture and 1 egg. Sprinkle with remaining cilantro. Serve with avocado and additional hot sauce if you like
